Haloumi. I have evidence that after one dies, having been virtuous like me, one goes to heaven and spends the rest of eternity eating haloumi.

there's a little Cheesery near me on Salt Spring Island, and they make the softest, creamiest, most delicious Goat Brie I have ever had. I could die happy with a wheel of that stuff in my hand, and happier with it in my mouth

No words can describe the wonder of Haloumi! But it's a cheese from Cyprus, salty with a rubbery texture, usually soaked in brine. You can actually fry it without it melting (no I am not kidding), although I prefer it plain.

That sounds awfully good.
I'm copying everyone's suggestions down to have a little tasting. Great thread idea

My choice would be Robiola della Alta Langa. But I know a lot of my adoration comes from the company that I shared with with and the vat of wine and laughter that accompanied it. Italy has never disappointed me! Robiolas look and taste different from different regions of Italy.

also, about 90 minutes from my house there is the Tillamook Cheese Factory on the Oregon coast. their cheeses are wonderful. especially the habanero jack cheese, if you like it spicy. yummmm. makes great grilled cheese sandwiches with a kick.

Crap, I guess I only like mozzarella because I eat Pizza Puffs and Pizza and used to eat mozzarella sticks. I don't like Cheddar, but I eat Kraft's mac. Does that count? LOL
I do dislike American Cheeze. Sorry. :/

Velveeta.
It's really good. Nothing fancy for me - I've never been big on 'fancy' foods - but I'd be willing to try just about anything (as long it doesn't try to bite me or sting me while I'm trying to eat it!).
A Velveeta burger made medium rare with some mayo, ketchup, and bacon is just about priceless.

My father used to really enjoy smelly Limburger cheese and sardines. He was very polite about having it around, kept it tightly sealed in a coffee can he only opened outside on the screened-in porch! Limburger is an acquired taste, I'm sure.

I love velveeta too! makes the best grilled cheese sandwiches! for mac and cheese I used to use a can of cheese soup! haven't seen that for awhile, will have to check to see if they still have that on the shelves.
a friend of mine got me hooked on baby swiss. I love swiss cheese but had never heard of baby swiss until he had me get him some. it really does have a different taste than regular although either is fine with me.

I love asiago too; there is an asiago from wholefoods with - I know this sounds weird - espresso crystals along the rind (and some in the cheese itself) that's out of this world. Mmm.
The meaning of life, clearly, is cheese, and the endless eating thereof.

I just had that the other day. It's almost sweet like a dessert-y cheese.
I'm betting it would be really good paired with a wine with chocolate notes
